madcat Posted September 21, 2005 Share Posted September 21, 2005 This dose not have the same texture as a baked cheese cake, and it can be a little runny, but it is so good and so easy! 1 container soy cream cheese1 package van jell-o instant pudding (other flavors would probably be good too!)1 cup soy milk 1 graham cracker crust (keebler ready crust is vegan) Mix cream cheese, soy milk and pudding mix in food processor. Pour in to crust. Let it chill in the fridge (about an hour). And sliced fruit if desired (I used strawberries). Eat. Easy easy easy. I brought this to a bbq. One of the girls there was not a vegan but she was allergic to dairy. I had to fight her off with a spoon so that I could have a piece. Link to comment Share on other sites More sharing options...
CrispyQ Posted November 4, 2005 Share Posted November 4, 2005 I made these for our Halloween pot luck at work & they disappeared so fast I'm glad I ate one the night before! I made a few changes. First, I used cupcake liners in muffin cups to make individual treats. I pressed the graham cracker/Earth Balance mixture in the bottom of the cups & placed in the fridge to set. Then I mixed up the cheese cake part, using 1/4 more of a container of cream cheese & 1/4 cup less of milk. Spoon into the muffin cups & chill. They rocked!! Very good, but I can only make them for events where others will eat them or I would eat them all. The choco/cherry sounds really good & I'm very hungry right now!!
